Everybody should have garlic infused oil, it is so lovely. Add it to any dishes where it needs garlic and Pizza, drizzled over pizza is so, so good. If you make your own pizza, spread some on the base first.
Also makes delicious garlic bread. Spread it on a baguette, add a little chopped garlic and put in the oven for around 10 mins.
INGREDIENTS
200ml (~1 cup) of olive oil (Get a good quality oil)
4-6 cloves of garlic
INSTRUCTIONS
- First peel the garlic cloves, doing your best to keep them fully intact.
- Cut off the root end, this makes contamination with C. Botulinum less likely.
- In a pan, cover the garlic cloves in the oil and gradually raise the heat until the garlic is bubbling gently.
- Simmer for around 15 minutes. The garlic should go beautifully golden but not black or burnt.
- Turn off the heat, cover and leave to cool and infuse for the rest of the day or at least a couple hours.
- When the oil is cool, you’ll need to carefully strain out the garlic. Any little pieces left in the oil will stop it being low FODMAP so don’t agitate the softened cloves.
- Meanwhile sterilize a jar & lid by first washing it with soupy water, rinsing it and placing it in a hot oven for 10 or so minutes. Then leave to cool.
- If you have a muslin cloth to hand, use it laid over your sieve on top of a bowl/jug. Pour in the oil and check the result is beautifully clear.
- Transfer the strained oil into your sterilized jar and enjoy! You can safely store it for up to two weeks and even keep it in the fridge, although it will solidify a bit. Makes 200ml
Garlic also has Medicinal Uses, it makes a lovely warming oil when ginger oil, turmeric and cayenne are added, and it eases the pain in my arthritic knee. I make up a salve or cream to apply.
For internal use, simply eat more garlic in foods. For best results, garlic should
be chopped fine and allowed to rest for 10 minutes or so before cooking, Chopping, and allowing time for the sulfurous compounds to develop in the garlic, will make it more potent.
Some people complain of a strong garlic smell in their sweat when consuming garlic. This is a natural
response and indicates that the body is using the beneficial components. To alleviate this complaint, eat fresh parsley with the garlic.
Treating Viral, Bacterial, and Parasitic Infections
Components of garlic are a potent antibiotic, antifungal, and anti-parasitic substances that treat these infections as well as penicillin and other antibiotics. I use garlic to treat infections of all kinds, including colds, flu, sore throats, bronchitis, stomach flu, and intestinal worms(especially in my horses).
Thrush, Yeast, and Fungal Infections
I use garlic preparations topically to treat thrush infections and other types of yeast or fungal infections. Spread a paste of garlic on the affected area several times a day and eating garlic regularly to clear the infection internally. Take a large spoonful of garlic oil.
Digestive Problems
Garlic improves the digestion and is useful to relieve excessive gas, bloating, and other digestive upsets.
Lowers Blood Sugars in Diabetics
Garlic helps lower blood sugar in diabetic patients by improving the function of the pancreas and increasing the secretion of insulin. This helps the body regulate blood sugar levels and alleviates the problems associated with high blood sugar.
To be effective, garlic needs to be eaten at every meal in significant quantities.
Bronchitis, Whooping Cough, Congestion of All Causes
Garlic has a strong decongestant effect and expectorant action. It is useful where phlegm or mucous is a
problem. Garlic also reduces fevers and kills off the underlying infection. It is also useful for bronchial asthma where the breathing passages have swollen making breathing difficult.
Elevated Blood Cholesterol Levels, Blood Pressure
Garlic can effectively lower blood cholesterol levels when consumed regularly. And it usually had the
added benefits of also lowering their blood pressures and clear plaque from their arteries. Many have escaped a deadly heart attack that way. Their whole-body blood flow improved as well.
Corns, Warts, and Acne
For corns, warts, and acne, rub a paste made from fresh mashed garlic on the affected spot. Garlic
actually softens and soothes the skin and kills the viral or bacterial infection causing the problem.
